Here’s the detailed recipe for a flavorful Mutton Soup 

Ingredients:

  • Mutton (with bones): 500 grams
  • Ginger (finely chopped): 1-inch piece
  • Garlic: 5-6 cloves, crushed
  • Onion: 1 medium-sized, chopped
  • Tomato: 1, finely chopped
  • Cumin seeds: 1/2 teaspoon
  • Whole black pepper: 2 (optional, for extra flavor)
  • Small ginger: 1-inch piece, chopped
  • Cloves: 3-4
  • Turmeric powder: 1/2 teaspoon
  • Red chili powder: 1/2 teaspoon (adjust to taste)
  • Toor dal (pigeon peas): 1/2 cup
  • Curry leaves: A few sprigs
  • Coriander leaves: 2 tablespoons
  • Fresh coriander: A small bunch (for garnish)
  • Salt: To taste
  • Water: 5-6 cups (adjust according to desired soup consistency)

Method:

  1. Prepare the Mutton:

    • First, wash the mutton pieces thoroughly.
    • In a bowl, mix the mutton with ginger, garlic, turmeric powder, cumin seeds, cloves, and red chili powder. Let it marinate for 15-20 minutes.
  2. Cook Onions and Tomatoes:

    • In a medium-sized pot, heat some oil and add the chopped onions, ginger, garlic, and curry leaves.
    • Sauté until the onions become golden brown.
    • Add the chopped tomatoes and cook until the tomatoes turn soft and mushy.
  3. Add Mutton:

    • Now, add the marinated mutton pieces to the pot. Sauté them for 5-7 minutes until the mutton pieces are lightly browned and the spices are well mixed.
  4. Add Toor Dal and Water:

    • Add the toor dal (pigeon peas) and water to the mutton mixture.
    • Stir well and bring to a boil.
    • Cover and let the mixture cook on medium heat for 25-30 minutes. If using a pressure cooker, cook for 3-4 whistles, or until the mutton is tender and the dal is cooked.
  5. Strain and Serve:

    • Once the soup is ready, strain it to remove bones and excess solids, leaving behind the rich and flavorful broth.
    • Adjust the salt and chili powder according to taste.
    • Garnish with fresh coriander leaves.
